Pearl barley risotto with a selection of seasonal mushrooms, oyster mushrooms in panko and marinated chicory

 History tells us that groats were one of the staple foods in Poland for a long time. They even found their way into works of literature such as Pan Tadeusz and Lalka. Nowadays, groats are no longer a delicacy for us. However, they are making a comeback thanks to kaszotto.

What is kaszotto?

In short, kaszotto is a one-pot dish. Its preparation is really limited to cutting vegetables and stewing them together with groats in a pan. The time it takes to make depends on how far our imagination takes us.

Chef Patryk Dusza shared with us a recipe for kaszotto made with pearl barley, a selection of seasonal mushrooms with panko-coated oyster mushrooms and marinated chicory.

It's a long name, isn't it? Believe us, it's much quicker to prepare than to read the name 😊

What do we do with groats?

First, soak the dried mushrooms. Fry the diced onion and sliced garlic in a small amount of oil. Add the pearl barley and roast. Pour in the white wine and cook until it evaporates. Then add the water from the soaked mushrooms and the stock. Add the chopped dried mushrooms and seasonal mushrooms (they can be raw). When the groats are soft, add butter, pepper, salt and lemon juice.

Voilà, the kaszotto is ready!

How to prepare the mushrooms?

Tear the oyster mushrooms into long pieces. Coat them in the following order:

1. flour with salt,
2. egg with salt,
3. panko,
4. fry in deep oil until golden brown,
5. finish with Pecorino sheep's cheese, lamb's lettuce and drizzle with truffle oil.

What ingredients do we need for kaszotto?

• 200 g pearl barley
• 1 small onion
• 2 cloves of garlic
• 100 ml white wine
• 100 g butter
• 50 ml oil
• salt and pepper to taste
• 60 g pecorino cheese
• a few dried or fresh mushrooms
• 1 egg
• flour
• panko
• a handful of oyster mushrooms
• truffle oil
• 1 lemon
• 1 litre of stock
