In cities such as Warsaw, Krakow and Wrocław, new mobile food outlets are popping up all the time, offering everything from burgers to ramen, vegan dishes to Mexican cuisine. But is the food truck business really profitable? Is it a passing fad or a stable idea for a profitable business? In this article, we take a closer look at all aspects of running a food truck – both the positive ones and the challenges that are worth knowing before you start.

Why do people open food trucks?

For many people, a food truck is a way to combine their passion for cooking with independence. Mobility allows them to reach customers in various locations – from festivals and fairs, through city centres, to private events. Compared to a traditional restaurant, the start-up costs are lower and the form of business is more flexible. However, it is worth remembering that running a food truck is not just about cooking – it also involves logistics, marketing, route planning, staff management and meeting strict sanitary requirements.

The advantages of running a food truck

Let's start with the positives. The food truck business has several strengths that appeal to many budding entrepreneurs:

  1. Lower start-up costs – buying a used food truck can cost tens of thousands of pounds, which seems like an attractive alternative compared to the costs of opening a restaurant (rent, renovation, equipment).

  2. Mobility – we can adjust the location to demand. When the city centre becomes deserted, we can move to a stadium, a fair or an outdoor event.

  3. Seasonality as an advantage – although traffic drops in winter, in summer we can generate significantly higher revenues by serving numerous festivals, company picnics and city events.

  4. Local and social media marketing – presence at events allows us to build our brand and gain loyal customers who then follow our locations on social media.

  5. Uniqueness of the offer – a food truck gives you room to experiment and stand out, which is crucial in the competitive catering market.

Challenges and risks worth knowing about

Although there is a lot of talk about the success of food trucks, the reality is more complex. This business model also has its downsides, which should be taken into account when planning your business.

The first of these is weather conditions – rain, snow or strong winds effectively deter customers. What's more, not every location is profitable – it often takes a long time to test different places before finding the ones that are profitable. There are also formal restrictions – many cities have regulations on street trading, which means that we cannot park our food truck wherever we want.

Added to this is the intensity of the work – food trucks often operate in "event" mode, which means working several hours a day during the season. In addition to cooking, you have to take care of delivery logistics, cleanliness, marketing and contact with customers and event organisers. Contrary to appearances, this is a full-time, and sometimes even overtime job.

The seasonality of sales is also important – in autumn and winter, food truck traffic drops sharply. This means that profits from the summer season must not only cover current costs, but also provide a financial cushion for less profitable months.

What is worth knowing before starting a business?

First of all, you need to start with a good business plan. Think about what kind of cuisine you want to serve, who your customers will be, where you plan to operate and how you intend to promote yourself. You will also need to obtain a health and safety permit, register your vehicle as a catering outlet and take out insurance.

Here are some key elements to consider before you start:

  • Purchase or rent a suitable vehicle with full catering equipment.
  • Adapting the food truck to sanitary requirements and local regulations.
  • Marketing strategy – social media presence, cooperation with event organisers, local promotions.
  • An off-season action plan – e.g. corporate catering, deliveries, cooperation with event companies.

Is it worth investing in a food truck?

A food truck can be a great business idea if you approach it with the right preparation, flexibility and risk awareness. It is an ideal solution for creative people who love interacting with people, cooking and are able to react quickly to market changes.

From our perspective, the biggest advantage is independence and the ability to experiment with the form and menu, and the biggest challenge is seasonality and unpredictability of traffic. It is a business that can be very satisfying, but it also requires a lot of commitment – both emotional and time-wise.

If you dream of your own catering project but do not want to be tied to a permanent location, a food truck can be the perfect starting point. However, as in any business, the key to success lies in good planning, market analysis and continuous improvement of your offering.
